§ 5-6.1008. Grease Trap Requirements.

(a)

If provided, a grease trap shall not be located in a food or utensil handling area unless specifically approved by the Director or Stanislaus County Department of Environmental Resources (Health).

(b)

Grease traps shall have a solids interceptor installed prior to entering the device.

(c)

Grease traps shall be easily accessible for servicing.

(d)

FSEs or MFFs that have an approved grease trap in operation before the effective date of this article are not required to comply with this requirement unless there is a change in ownership or a change in operation, or a requirement by the Director or Stanislaus County Department of Environmental Resources (Health).
